Victoria's Breakfast Bickies
Ingredients:
½ cup non dairy protein
powder (pea, vanilla or chocolate protein powder)
½ cup hemp protein
½ cup freshly milled raw
nuts (not peanuts),
½ cup coconut oil
350-400 ml coconut cream
Some coconut flour may be
added for a firmer consistency
Additions may include cacao
nibs, cinnamon, nutmeg, antioxidant powder (acai, goji, macqui), maca, or
turmeric/freshly ground black pepper (for medicinal value) matcha powder.
You may choose to make them
in different flavours and cacao nibs may be added to all or any as a high
antioxidant healthy ‘choc’ addition.
Cinnamon, nutmeg, and maca
to one portion.
Macqui or other antioxidant
powder to another portion.
Matcha tea offers a
different flavor and increased antioxidant value to another portion
Turmeric powder and freshly
ground black pepper is more medicinal, but a wonderful way to get curcumin
within the daily diet. This is real liver food.
The ingredients may be
obtained from Herbie’s spices (in health stores), Power Superfoods (online or
health stores), Matcha powder (Optimoz online)
Mix all ingredients to make
a smooth batter and drop dessertspoon fulls onto a baking tray covered with baking paper, approximately 12/tray.
Bake at 180oC
until base is golden brown and allow to cool on the tray.
These are high protein and
best stored frozen wrapped in parcels of 3 to 4, which is sufficient for a
sustaining breakfast or lunch.
