Julieta's Bickies

A totally gluten-free biscuit sweetened with the natural small amount of fructose of berries and dry apricots, and with the nutritious benefits of quinoa, buckwheat and coconut flour. This treat will keep you physically well supported and full of energy during work time. You can freeze them one by one in little bags and every day you take one with you as your wonder snack.

Ingredients:

3/4       cup quinoa flour
3/4       cup buckwheat flour
1/2       cup coconut flour
1          tbs yeast (baker's yeast)
3          eggs
5          tbs ghee
5          tbs coconut oil
3          dry apricots cut in little squares
1/2       cup of milled nuts: walnuts, brasil nuts, macadamias,  almonds; no peanuts
1/2       cup of seeds: grind sunflowers, pepitas, sesame and flaxseeds.
1/2       cup berries: goji, currents, and/ or bilberry.
1          big orange pill sliced in very fine little strips.
Almond or coconut milk to bind.

Instructions:


  1. Put all the flours and yeast in a big bowl. 
  2. Add the ghee and coconut oil and mix well.
  3. Mix the eggs well and add to the flours.
  4. Add the nuts, seeds, berries and orange pill.
  5. Add milk and mix until they form a firm paste easily to be shaped into longish and thick power biscuits. 
  6. If you would like, you could pass these biscuits through raw sesame seed to add solidity and a good look to your final product.
  7. Bake at 200 degree until they become golden. Let cool in the try and after you can wrap them and freeze them.
